Culinary curriculum in the Biltmore

The 276-room Biltmore Hotel's Culinary Academy in Miami has launched a Culinary Boot Camp which offers guests the opportunity to combine a luxury holiday while learning culinary arts along such masters as Chef Philippe Ruiz who oversees the resort's Palme d'Or, named the top restaurant for food, décor and service by Zagat in its 2010 Miami / South Florida Restaurants survey.

Participants will learn the details, ingredients and presentation behind culinary masterpieces through daily classes in the academy's kitchen lab, wine tasting seminars and behind-the-scene access in a professional kitchen.

The programme consists of a week-long camp or a weekend camp and includes basic training in knife skills and butchery, pantry, herbs & spices, Italian technique, cold kitchen, meats, seafood and poultry and grains.

The culinary boots camp offer up to 37 hours of instruction. The all-inclusive programme is priced at $2,175 for the weekend camp on February 5-7 including deluxe accommodation and daily meals at the Biltmore's award-winning dining destinations, beverages, tax and gratuities.
